As a passionate cookie monster & ice cream addict I thought: Why not taking the best out of both worlds and create a heavenly dessert? So I came up with the idea to fill freshly baked choc chip cookies with my favorite ice cream flavors. It’s such a simple dessert but so much fun to make and it’s perfect for summer parties! Sweet tooth heaven! Here’s the recipe:
For the filling I’ve used Häagen Dazs Vanilla Caramel Brownie // Mango Cream // Caramel Biscuit & Cream
DOUBLE CHOC CHIP COOKIES (35 mins // 24 cookies)
1 ¼ cups Margarine
2 cups Sugar
2 large Eggs
2 teaspoons Vanilla
2 cups Flour
¾ cup Cocoa
1 teaspoon Baking Soda
½ teaspoon Salt
2 cups Chocolate Chips (1 cup white & 1 cup dark choc)
Cream together the margarine, sugar, then add the eggs and vanilla.
Blend in the cocoa and add baking soda, salt and blend well.
Add the flour into the creamed mixture and fold in the chocolate chips.
Bake in oven 180° for 8-10 minutes.
When you remove the cookies from the oven they will still be soft, leave to cool completely on the baking tray, where they will continue to cook slightly. When completely cold move to a cooling rack. Fill them with your favorite ice-cream flavors and put in the freezer for 15-20mins. YUM!!
